My Paleo Krunch experiment

My husband bought some yummy Paleo Krunch for a tasty snack that fits into his diet. Not only does it taste good but it does good too. I thought I would try to please the man by making my own version of the recipe.

Preheat oven to 325 F

In a large bowl combine:
1/2 cup raw pumpkin seeds
1/2 cup raw sunflower seeds
1 cup almond meal
1 cup shredded, unsweetened coconut
2 cups raw slivered or chopped almonds
In a measuring cup combine:
1/2 cup grapeseed oil
1/2 cup raw honey
1-2 tsp vanilla

Add the wet ingredients to the dry and combine well. Spread in a thin layer over one or two baking sheets with sides (like a jelly roll pan). Place in preheated oven for 25 minutes. Redistribute the Paleo mix and return to the oven for 5 minutes or until golden brown. Let cool on the pan(s) for 5-10 minutes.

I was so happy this little experiment worked out. I love trying new recipes and I scored big points with the hubby. This Mom loves our new Paleo mix. Mmmm.

  1. Glad it worked out Mom! We have since replaced the grapeseed oil with coconut oil.

    Thanks for the support!

  2. We really love it and have been playing around with using coconut oil too. My hubby just got a big box of goodies (Paleo Kits and such) from you this weekend. It made snacking while traveling very easy. Thank you.

  3. You need to add the blog feature to share at the bottom of your post. Since you don't have it, will you email me the recipe?
